Simple Chicken Salad Impresses the Neighbors!

Sponsored by Perdue

My next-door neighbor grills almost every night. The sweet-smelling smoke wafts over the fence and through the air, making my stomach grumble.

“Oh, it’s nothing!” she says. “All I do is turn on the grill!”

Sorry, but I don’t believe her.

When I grill, it’s always a production. Even the simplest summer grilling recipes mean remembering to allow time to marinate the chicken, gathering the right utensils, and opening and shutting the door to the deck 15 times, letting a fly in each and every time.

But I love chicken, and never more so than in the summer. And once I discovered PERDUE® SHORT CUTS® Carved Chicken Breasts, my whole life changed! These fully-cooked, carved strips of chicken are always fresh – never frozen. They’re perfectly seasoned and have no preservatives)—and they’re gluten-free which is great for my sensitive belly!

Best of all, they’re ready to go when you are. You can heat them up or eat them cold. Either way, they’re ultra-convenient, completely delicious and perfect for a whole bunch of healthy summer recipes. I like to use my PERDUE® SHORT CUTS® Carved Chicken Breasts for chicken salad and all kinds of tasty sandwiches.

My favorite summer chicken recipe of all is the Southwestern Style Chicken Fajita Salad.  It only takes a minute to chop up the veggies (sometimes I buy them pre-chopped, but don’t tell my husband!) and whip up the dressing, and no time at all to sauté it all together.

Not only does it make a pretty presentation, but, thanks to the PERDUE® SHORT CUTS® Carved Chicken Breasts it’s such a simple chicken recipe I can make it any day of the week.

But, perhaps best of all, the last time we invited our next-door neighbors over, I served my Southwestern Style Chicken Fajita Salad and they were totally impressed that I had the time to go to so much trouble!

As for me, I was just happy not to have the flies in the house.
