Lemon Chicken and Potatoes with Butter Sauce

Have you ever had one of those days where you wanted something light and yummy on your plate, but didn't want to eat air? This is yet another reason why it's good to keep an ace or two up your sleeve in the recipe department -- and boy, do we have the perfect dish for you.


Okay, it's chicken, BUT a very tasty chicken meal your family will enjoy. Sometimes it's good to have lightweight options that fill up your tummy without giving you a case of the "itis."

Chicken & Red Potatoes in Lemon-Butter Sauce


  • 5 boneless and skinless chicken breasts
  • 1 tablespoon oil
  • 2 lemons, sliced
  • 1/2 pounds red potatoes, quartered
  • 2 teaspoons dried basil
  • 1 teaspoon dried thyme
  • 1 stick of butter
  • 2 tablespoons lemon juice
  • Salt and pepper to taste


1. Heat oil in a skillet on medium-high heat. Once hot, season chicken breasts with salt and pepper, and cook on each side until brown.

2. Meanwhile, preheat oven to 400 degrees Fahrenheit.

3. Once chicken is cooked, place inside a baking dish along with red potatoes and lemon slices. Season with basil, thyme, and salt and pepper. Bake for 50 minutes.

4. In a small saucepan, melt stick of butter on medium heat. Add in lemon juice and salt and pepper to taste.

5. Once chicken and potatoes are out of the oven, add lemon-butter mixture to baking dish.

Serve with favorite vegetables.
