Dinner for $10 (or Less): Chicken in a Creamy Bacon Sauce

Chicken in a creamy bacon sauce

You're going to get tired of making chicken for your family -- and that's okay. Sure, it's a great source of protein, but after a while, those chicken dishes can start to look and taste the same. This is why you need a few recipes in your quiver that turn up the flavor and make you forget your love/hate relationship with that bird.

When in doubt, add cream. (No, really!)

It really is unbelievable how a little sauce can go a long way. This skillet dish doesn't take a ton of time to make and will likely be a hit among your family. Plus, who doesn't love bacon?!

Chicken in Creamy Bacon Sauce (adapted recipe from Julia's Album)

  • 6 boneless chicken thighs
  • 1 cup chicken stock
  • 1 packet of bacon
  • 2 tablespoons oil
  • 1 lemon
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/4 cup scallions, chopped

1. Cook bacon in a skillet on medium-high heat until desired crispiness. Remove from skillet, chop into pieces, and set aside.

2. Using the same skillet, heat oil on medium-high heat. Season chicken thighs with salt and pepper on both sides. Add chicken to the skillet and cook for seven minutes, or until light brown. Remove from skillet when done.

3. Add bacon back to skillet, along with chicken stock and garlic powder. Stir and allow to cook for one to two minutes.

4. Add chicken back to the skillet (it's okay to place on top of bacon). Cut lemon into slices and place around the dish. Reduce to medium heat and cook for 20-30 minutes -- or until chicken is no longer pink.

5. Remove the chicken and lemons from the skillet (last time -- promise!). Add heavy cream to the skillet and bring to a boil, before reducing heat to simmer. When done, add chicken thighs and lemons back to skillet. Allow to cook for another five minutes.

6. Add scallions and serve.
