Dinner for $10 (or Less): Tasty Slow Cooker Pork Chops With a Side of Baked Beans

Slow-cooker pork chops with sweet and spicy beans

There are days when you want to curse your stove top and all the groceries in your refrigerator. No, it doesn't make you ungrateful ... just honest! You're simply a mom who doesn't feel like cooking (and that's okay). But this is also why you need a slow cooker in your life, one that will save the day when you feel too spent to break out the pots and pans.

(It's no secret how much I love my slow cooker. That amazing contraption is one of my BFFs and has saved my ass many a day.)

Recently, I suffered from a Chopped moment. (You know, that TV show where chefs are given random things to make?) I forgot to go grocery shopping (hey, it happens) and desperately began searching around my kitchen for something edible to put on the plate -- without having to call up the pizza man. That's when I remembered we had pork chops and a can of beans.

Now, pork and beans might seem blah to ya, but that's because you probably never had your slow cooker make the chops for you. (Not only are they super juicy, but also delicious.) Should you happen to find yourself in the same predicament, here's one simple dish to get you out of that bind.

Slow-Cooker Pork Chops With Beans (adapted from recipe on AllRecipes.com)

  • 6 Boneless center-cut pork chops
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • 1½ cups chicken broth
  • 1¼ tablespoons garlic powder
  • 1½ tablespoons paprika
  • 1½ tablespoons poultry seasoning
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 28-oz. can of baked beans* (I used Bush's Best Sweet Heat Baked Beans with onions and serrano peppers in a sweet and spicy chili sauce)

(*Note: The baked beans do not go inside of the slow cooker. Make these according to the directions on the label and keep as a side dish.)

1. Mix olive oil and remaining ingredients (remember, not the baked beans) inside a bowl.
