Elote 'Mexican Street Corn' Recipe Makes Eating Veggies a Tastier Reality


Have you been looking for a new side item to put on your dinner plate? Or, maybe you've been desperately trying to get your kiddos to eat more veggies? (Hey, that struggle is too real.) Whether your answer is a simple yup or a big ol' hell yes, I've got something for you: elotes, aka "Mexican street corn."


Can I be honest? This is a pretty big hit in my home. Whether we're trying to throw something together for Cinco de Mayo or we just want some corn on the cob, this is a creamy side option that will keep folks licking their fingers. (Just ask my father-in-law.)

While traditional elote recipes call for cotija cheese, it's not always easy to find. Should you want to enjoy a bit of cheesy goodness, we've got something for you (if you don't want it, just go without it).

Elotes - "Mexican Street Corn" (adapted from recipe on Serious Eats)


  • 4 ears of corn
  • 1/3 cup of mayonnaise
  • 1 lime or 2 tablespoons of lime juice
  • 1 tablespoon paprika
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup shredded Parmesan cheese*
  • 3 tablespoons chopped cilantro

(*Note: If you can find cotija cheese, use it. If not, feel free to sub in Parmesan like I did -- or none at all. Parmesan definitely won't taste like cotija, but it will give your corn some texture. Feta cheese is also an option.)


1. Preheat oven to 375 Fahrenheit. Place the corn on the oven rack (it's okay to leave them inside the husks), and bake for 15 minutes. Flip to the other side and bake for another 15 minutes.

2. In a small mixing bowl, whip together the mayonnaise and spices (paprika, chili powder, and garlic powder).

3. Once the corn is out of the oven (and cool), remove the husks -- or pull back (if you want a little color on your plate). Spritz with lime juice, and brush with mayo mixture. Add salt and pepper to taste. Sprinkle cheese and fresh cilantro on top.

Repeat for all ears of corn.

(I used mayonnaise I had in my refrigerator, but you can purchase a small container for $2.50.)
