Dinner for $10 (or Less): 4-Ingredient Slow-Cooked Balsamic Chicken

Slow-cooked balsamic chicken

Moms don't always have a ton of time to stay in the kitchen and attempt to whip up something tasty their family will enjoy. That might work for a Food Network star -- but in an everyday home? Yeah, that ain't gonna happen, Captain. This is why we need quick, go-to recipes that are super tasty without a ton of effort. And, guess what, moms? I think I have one for the books!

Say it with me: Four-ingredient dishes are our friend. In fact, they're our best friend -- our wingwoman -- who get us out of hangry binds that often occur when we're starving and have nothing cooked. (You know you've been there.)

Do you love savory pull-apart meat that looks like you picked up a to-go order from some authentic restaurant? Well, that's kinda what this is. Should you happen to have four to six hours to spare, you too can make this awesome dish. Heaven knows I was beyond thankful it was very easy to make.

Slow-Cooked Balsamic Chicken (adapted from recipe on Skinny Ms.)

  • 4 boneless skinless chicken breast (you can use more if you'd like)
  • 1 large jar salsa (try to find one that has a good amount of tomato chunks, peppers, and onions)
  • 1/3 cup balsamic vinegar
  • 1/4 cup red cooking wine
  • Salt and pepper, to taste (optional)

1. Place chicken breast inside a slow cooker. (Easy, right?)

2. Add salsa, balsamic vinegar, and red cooking wine. Add salt and pepper (optional).

3. Cook on low heat for five to six hours, or on high heat for at least four hours. (Note: If you put a fork or knife inside a chicken breast, the meat should start to fray.)

4. Using a cook fork (I used two to make things easier) and a fork or knife, begin to shred the chicken. (If you haven't done this before, insert the fork or knife inside the chicken -- to hold steady -- and use the cook fork to "scrape" or shred the chicken.) Repeat for all pieces of chicken, until you have thin pieces.
