Make This Insanely Easy Beer Dip With Shamrock Chips for St. Patrick's Day

Here’s an easy and delicious cheese dip for your St. Paddy’s party featuring a special ingredient -- Irish beer, of course! (FYI: The beer is just for flavor and totally okay for kids to eat.) Pair this dip with toasted spinach tortillas shaped as shamrocks and instantly become the the hostess with the mostest. 


Even if you’re not throwing a party, this is a fun Irish-inspired snack for your family. Get the kids involved by having them press your shamrock cookie cutters into your spinach tortillas. After you make the dip, there is plenty of beer left in the bottle to celebrate St. Patrick’s Day the way you used to before you had kids.

    • 8 ounces cream cheese
    • 2 cups shredded cheddar cheese
    • 1/3 cup of Guinness beer
    • 2 tablespoons of half-and-half
    • 2 teaspoons of Dijon mustard
    • 1 tablespoon of minced garlic
    • 3 tablespoons of chopped parsley
    • 4 chopped scallions
    • olive oil
    • spinach tortillas



Step 1: Blend together your cream cheese, cheddar cheese, half-and-half, mustard, and garlic together in a mixer. 

Step 2: Scrape the sides of the bowl and then mix in the beer.

Step 3: Pour in the chopped parsley.

Step 4: Gently fold in scallions, leaving some to garnish the top of the dip. Put in a bowl and place in the refrigerator for at least two hours, but preferably overnight. 

Step 5: Press your shamrock cookie cutter into spinach tortillas. 

Step 6: Brush your olive oil onto both sides of your shamrock. 

Step 7: Bake in a preheated oven at 400 degrees for about 5-7 minutes. Check often to make sure they don’t burn. Serve warm.
