Cafe Kim's Grandma baking holiday cookies
I'd like you to meet my grandma (left), who has taught me everything I know about cooking. Every year around this time I visit her so we can bake holiday cookies together. Correction: I bake and she stands over my shoulder telling me what I'm doing wrong.
This year we did easy peppermint puffs (among several other kinds). These are great to make with kids because you can have them help roll the dough into little balls and then decorate with crushed candy canes.
2 cups flour
1/4 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
1 cup confectioners' sugar
1/2-3/4 teaspoon peppermint extract
1/2 teaspoon vanilla extract
8 ounces white chocolate, melted
1/2 cup cup finely chopped candy canes or sprinkles
Sift flour and salt in bowl. In another bowl, beat butter and sugar until smooth and creamy. Beat in egg. Beat in peppermint and vanilla extracts. On low speed beat in flour mixture. Refrigerate dough 15 minutes to 1 hour.
Grease baking sheets. Form dough into 1-inch balls. Bake at 375 for 10-12 minutes or until bottoms are lightly browned. Cool completely. Brush with melted white chocolate and top with candy canes or sprinkles.
