10 Yummy Pasta Recipes Specifically for Delicate, Gluten-Free Noodles (PHOTOS)

gluten free pastaIf you've decided to give a gluten-free diet a try but don't want to sacrifice big flavor, don't worry.

We've found some gluten-free pasta dishes that will have your mouth watering in anticipation. But if you've ever experimented with this type of starch, you probably discovered that if you don't know what you're doing, you can quickly end up with a sticky pile of mush, am I right?

gluten free pastaBecause gluten-free pastas have a tendency to fall apart, you can't just swap them for traditional pastas in your favorite dishes and expect the same results. 

If you want to give it whirl but don't know where to begin, fear not, Elizabeth Barbone, of GlutenFreeBaking.com, shared some of her secrets for preparing perfect pasta every time. 

She recommends using a large pot of salted (no oil added!) water and boiling 6 quarts for every 1 pound of pasta. Then, she says, stand by and keep stirring! The first 3 to 5 minutes are the most important as that's when the pesky noodles are most likely to stick together. (Who knew?) Don't be afraid to disregard cooking times and do your own taste-testing every couple of minutes to avoid overcooking, which causes that mushy texture. 

Now that we've got that out of the way, let's dive into these delicious dishes! We asked food bloggers, gluten-free gurus, and a nutritionist to share the dishes they feel best accommodate gluten-free pasta's delicate nature. These all look so good, it's hard to decide where to begin, but we think we'll start with #3.

  • Zucchini and Squash Pasta Bake

    Chef and food blogger Monica Puri Bangia, of SharingPlate.com, said she always wanted to experiment with gluten-free pasta.

    "I actually went shopping for lasagna noodles but couldn’t find the gluten-free variety. The store had run out of them, due to their popularity. I instead bought some (gluten-free) penne and planned on layering my dish like a lasagna using penne instead lasagna noodles. The dish was delicious -- my daughter couldn’t tell the difference in taste. She didn’t care for all the vegetables in there -- but the pasta was not an issue ..."

  • Banza Pesto

    Made from chick-peas, Banza pasta shared this yummy and colorful recipe that proves gluten-free penne can stand up to pesto.

    Ingredients (serves 3-4):

    1 box of Banza chickpea pasta, penne

    3  medium-sized cloves of garlic

    3-4 cups packed with basil leaves

    2 tablespoons pine nuts

    1 oz grated parmesan cheese 

    1/2 cup extra virgin olive oil

    Salt to taste -- start with a pinch 


    1. Bring a large pot of water to a boil.

    2. Pour box of Banza out into boiling water, stirring occasionally for 5-7 minutes.

    3. While Banza cooks, combine all other ingredients in food processor and processes until the pesto reaches preferred smoothness.

    4. Strain Banza and combine with pesto sauce.

    5. Add shaved parmesan to dish as desired.

    6. Enjoy!

    *For richer pesto experience -- yet slightly more labor intensive preparation -- use mortar and pestle instead of food processor.

  • Shrimp Caprese Pasta


    Fresh mozzarella and basil take this classic shrimp caprese pasta to another level. Nutritionist, food blogger, and cookbook author Lauren Kelly uses quinoa pasta, which stays firm and holds its shape, in this dish but explains that it can also be prepared with any whole grain penne as well. 

  • Lasagna

    Made with Tinkyada gluten-free lasagna noodles, this dish calls for gluten-free sausage and kale, making it hearty and delicious. Rather than boiling the noodles, allow them to rest in hot water for 20 minutes. If you find that the noodles are sticking together as you put the meal together, simply add a dash of olive oil to separate them.

  • 1-Pan Mediterranean Chicken

    This Mediterranean chicken entree has so many good things going for it! First, it can be made in one pan, meaning less cleanup later. (YAY!) Second, it can be ready in just 30 minutes. Third, capers, artichoke hearts, and fresh basil add tons of flavor as well as color, making for a pretty presentation. Simmering the pasta for 2 minutes less than recommended on its packaging keeps the penne firm and in tact.

  • Gluten-Free Pasta With Leeks & Thyme

    Food blogger and author of Gluten Is My Bitch April Peveteaux shared her recipe for Pasta With Leeks & Thyme. The gluten-free gourmet recommends reserving some of the liquid the pasta cooks in to add to the dish in case it seems dry, as gluten-free pasta has a tendency to soak up sauce like a sponge!

  • Pasta With Sausage & Mushrooms

    Gillian's Foods offers this hearty recipe for Gluten-Free Pasta With Sausage & Mushrooms. Spicy sausage gives the meal a kick, while ricotta cheese adds a creamy texture. Frozen spinach lends a pop of color as well as some valuable iron. Tip: After draining the pasta, don't rinse it, as you want it to maintain its natural starch.
