3-Ingredient Dish of the Week: Easy & Savory Crock-Pot Chicken Tacos

Have you ever had one of those days where you're craving a delicious dinner but don't have the time or energy to start slicing and dicing? Or have you come home excited to prepare a feast for your family only to discover you're missing the one ingredient that ties that whole dish together? (Garlic and ginger, I'm looking at you!) 

We've all been there! How many times have you been sucked in by a photo of a mouth-watering meal, but as you scroll down, it turns out the accompanying recipe calls for no less than two dozen ingredients? No thank you!

But what if you could whip up an amazing meal with only three components? Sounds too good to be true, right? Well, some clever food bloggers have come up with awesome and easy dinners and desserts that require minimal fuss but still taste incredible.

This week, we're in the mood for Mexican fare and have found a 3-ingredient Crock-Pot chicken taco recipe, adapted from TwoHealthyKitchens.com, that you can modify to your desired level of spice just by selecting mild or hot salsa. Sounds simple enough, right? It is!

What we love about this recipe (aside from the fact that we didn't have to run out to the store at dinner time to grab a bunch of spices) is its versatility. This yummy chicken can be served inside soft or hard taco shells -- what kid doesn't love those? Or arrange it atop some greens for an easy Southwestern salad. Spread it over some of your favorite tortilla chips and call it nacho night! Any way you serve it, it's sure to be a crowdpleaser. And bonus: It cooks in the Crock-Pot, leaving you free to do just about anything other than stand around the kitchen. Yay!

Here's what you'll need:

1.5 pounds boneless, skinless chicken thighs

1 (1.25-ounce) package taco seasoning mix

1 (16-ounce) jar of your favorite salsa


Place chicken in Crock-Pot. Sprinkle it with taco seasoning. Top with salsa. Cook on low for 8 hours or on high for 4 hours. When it's ready, shred chicken with two forks.
