We still have a few days left of summer, but this pumpkin roll monkey bread is already insanely popular and being shared like crazy among moms. And it's easy to see why: It's the perfect thing to bake for fall. This week, my daughter, son, and I rolled up our sleeves and baked it from scratch. So fun!

This turned out to be a great recipe to make with older kids -- mine are 7 and 6 -- since it largely involves rolling dough, punching it, shaping it into balls, and dipping it in butter and sugar. Super fun. Ultra easy. And OMG YUM.

  • Gather Your Ingredients


    Step 1: Collect the ingredients.

    For the rolls, you'll need:

    3 1/4 cups all-purpose flour
    1/2 tsp salt
    1 tsp pumpkin pie spice
    2 Tbsp melted butter
    1/2 cup warm milk
    1/4 cup warm water
    2/3 cup pumpkin puree
    1/4 cup sugar
    2 1/4 tsp active dry yeast

    And for the coating/filling:

    1 cup sugar
    2 tsp cinnamon
    1 stick butter, melted
    1 block cream cheese (not softened)
    12 oz pecan pieces

  • Mix It Up


    Step 2: In one bowl, whisk the dry ingredients (flour, salt, and pumpkin pie spice) all together. In another, whisk the wet (milk, water, pumpkin, melted butter, sugar, and yeast). Then pour the wet into the dry and mix together.

  • Kneading


    Step 3: Now the fun part! Knead the dough until you have a springy, orange blob. Make sure you massage out those frustrations in the bread dough. This is a great step for the kids to do too.

  • Dough Ball


    This is what your fully kneaded bread dough should look like. It should be springy to the touch.

  • Let It Rise


    Step 4: Coat the inside of a bowl with cooking spray and turn the dough around until it's covered in it. Then put a dish or paper towel over the bowl and let the dough rise for at least an hour.

  • Prepare Coating


    Step 5: While the dough is rising, prepare a bowl of the sugar/cinnamon mix and melt one stick of butter. Cut the cream cheese into small squares for stuffing inside the dough.

  • Roll Balls


    Step 6: Roll balls of the dough and stuff each one with a square of cream cheese. Roll them first in the butter, then in the cinnamon and sugar, and place them in your bundt pan. If you don't have one, you can use any regular cake pan.

  • Oven-Ready


    Step 7: Once all the dough balls are filled, pour any remaining butter and cinnamon/sugar over the top, and put in a 350-degree heated oven for 30-35 minutes.
