My Favorite Comfort Food

Mashed potatoes are a comfort food my kids never knew. Before you gasp in horror, let me explain. I love mashed potatoes. As a matter of fact, they are the first side dish I’ll order in a restaurant. After all, potatoes are nutritious and filling and have absolutely no fat or cholesterol or sodium. They have more potassium than a banana and are a great source of vitamin C. I know all that. But shamefully, I was never able to replicate the creamy, scrumptious mashed potatoes that I loved so much as a child.  

I tried. I really did. I’d spend a good hour in the kitchen trying to get it right. But still, my mashed potatoes took way too long to make and tasted way too bland. So I just kind of gave up and enjoyed them only as a treat when we were eating out.


But here we are, another year has gone by and it’s back-to-school time. The crazy routines have started up again with running here and running there. The kids’ favorite words are, “What’s for dinner?” and “Not again!”

I decided this year was going to be different. I would explore new foods and look for easy recipes that everyone would eat. I was looking around on the Internet and stumbled upon this video that showed how to make Country Crock Mashed Potatoes. It was as if it were done for me! I watched the whole thing and it couldn’t have been simpler. I was determined to master the mashed potato! 

Well, you know how things go, I got caught up in the middle of a million different things and forgot all about my mashed potato venture. But you’ll never believe what I came across when I was out getting school supplies and food for the family at Target.

It was a sign! I tossed the tub into my cart, picked up a bag of potatoes, and vowed that if they didn’t turn out right, I would never, ever try again. I even watched the Country Crock Mashed Potatoes video again! That’s how determined I was to make this work!

First of all, I couldn’t believe how simple the recipe was! Stuck in my mind was a long and grueling process, but it really only takes about 15 minutes to boil the potatoes. What a perfect time to fill out all those emergency forms and help with homework!

I was still skeptical as I started mashing in the milk. But when I added the Country Crock, I knew it was going to make all the difference.

And it did. The result was the creamiest, most delicious mashed potatoes I’d ever tasted. I served them up with grilled chicken and some green beans, and the way they gobbled them down, you’d have thought my husband and kids had never had a home-cooked meal before!

My Country Crock Mashed Potatoes immediately became everybody’s favorite -- including mine! I make them at least once a week now and no one gets tired of them. Sometimes I leave the skins on for a little extra fiber and to save a little time and even my picky son likes them that way.

So now, I can take comfort in knowing that my kids won’t ever miss out on the world’s best comfort food. But I still can’t believe that all this time, comfort was as close as a tub of Country Crock!
