Chipotle RiceIf you are like me and my family, then you know the joy of Chipotle. I am not kidding when I say my family and I frequent the place at least once a week. But what happens when you're miles and miles from the nearest burrito joint?

This is exactly where I found myself last week. I've been staying at my family's lake house for the summer. It's lovely and quiet but pretty much in the middle of nowhere. The nearest Chipotle is an hour by car, assuming no traffic, and there is no way that's going to happen on a random Wednesday night. So what's a girl with a serious craving to do?

  • Gather Your Ingredients


    Step 1: Gather your ingredients -- 1 cup extra long grain rice or basmati rice; 1 onion; juice of 1/2 lime; 2 cups water; 1 teaspoon salt; 3 tablespoons fresh chopped cilantro; 3 teaspoons olive or other cooking oil.

  • Chop Your Onion


    Step 2: Chop onions into tiny pieces.

  • Combine Rice and Onions


    Step 3: Combine rice and onions in pot with olive oil.

  • Add Water


    Step 4: Add 2 cups water and stir. Bring to a boil. Cover pot and let simmer for 20 minutes.

  • Chop Cilantro


    Step 5: Chop cilantro. Add 2 tablespoons to the rice mixture.

  • Add Lime


    Step 6: Add in the juice of at least 1/2 a lime. Stir.

  • Enjoy!


    Step 7: Enjoy!
