I have a confession; the only thing I have ever made in my waffle iron is, well, waffles. But after this fun little experiment, I realized that my trusty kitchen appliance, which had been relegated to creating just your basic waffles, is capable of other breakfast staples. You will need the following:

• Shredded potatoes (fresh or frozen). You can also use tater tots.
• Vegetable oil
• Salt and pepper

Yes, the waffle iron is no longer a single use gadget.  I put mac n cheese in the waffle iron, i mix yummy things with left over mashed potatoes and put that in the waffle iron too.  As a matter of fact, I put just about any non liquid casserole (left over) in the waffle iron.  Add to that sandwiches of all sorts (grilled cheese) and whatever you can think of can go into your waffle iron and come out crispy and great.  Really great kid food machine............
