Is there anything better than breakfast? Eggs, bacon, cheese, potatoes, and toast -- mmm, some of life's most delicious food offerings! But who has time to whip up a Ron Swanson-style breakfast every day of the week? With you and the kids scrambling around just trying to make it outside with both shoes on, you're lucky if you get to eat one of the mangled half-frozen waffles left on the counter before you hit the ground running.
That's where this redonkulously tasty breakfast casserole comes into play. It requires basically zero work. Even if the only "free time" you have is the 20 minutes between your kids falling asleep and you passing out where you stand, you can get this done.
Do it the night before and have it ready for the morning! Pop it in the fridge and then konk out while dreams of bacon dance through your head. Then, if you oversleep and don't have time to make lunches -- we can guarantee you that this casserole is so good, the kids won't mind eating it twice in one day ... or for several days thereafter!
Breakfast Casserole Recipe
Special Tips: Make ahead and keep in fridge up to 24 hours before baking.
4 slices bacon, Canadian bacon, ham, or breakfast sausage (or all of it! Go nuts)
1 small yellow onion, chopped
1/2 cup tomatoes (or sundried tomatoes, if you're feeling fancy)
3 cups frozen potatoes (I used hash browns)
1 cup milk or cream
2 cups sliced cheddar cheese (or mozzarella if you prefer; I like cheddar)
Slice up the meat of your choosing and cook it up in a skillet along with the onion.
Stir together the eggs, tomatoes, potatoes, and milk until well-combined.
Add the meat and onion mixture to the egg mixture.
Pour into a greased casserole pan. Sprinkle with cheese.
If you're ready to cook it now, let it bake at 375 for 40 minutes, or until the top is golden brown.
