Sinfully Good Tomato Vodka Pasta Recipe Is Totally Worth the Guilt

Mmm. I don't know what exactly it is about this time of year, but I can't bring myself to get on the grilled fish and salad bandwagon just yet. Instead, I want something hot, comforting, and satisfying for dinner -- like this kick ass Tomato Vodka Pasta recipe.

This dish is yummy enough to serve up any night of the week, but it's so indulgent, you might want to save it for special occasions instead. You know, like Saturday evening date nights "in."

And it's also such an easy meal to throw together. Although, if you're feeling creative, you can opt to use fresh tomatoes in lieu of the canned ones the recipe calls for. Nothing says romance like working your magic in the kitchen.

What are you waiting for? Open a bottle of red wine. Build a fire. And then enjoy this amazing dinner with the one you love and pretend you're eating at the finest restaurant in town.

Tomato Vodka Pasta

Parmesan cheese

2 lb. box of Mastacolli Rigata pasta or any tubular pasta

1 large can crushed tomatoes

3 small cans diced tomatoes

2 tsp crushed red pepper

1/2 stick butter

1 1/4 cup vodka

1 pint heavy cream

1/2 - 3/4 pint light cream

Directions:

Mix all tomatoes and cream in sauce pan. Stir until it looks pink in color; cook until it simmers. Add red pepper, vodka, and butter.

Keep stirring and let cook on medium. If it starts to boil, keep on low until pasta is ready. Mix pasta and sauce together in large bowl.

Sprinkle a good amount of Parmesan cheese on pasta, serve, and enjoy!
