Step-By-Step Ceviche Recipe Shows Anyone Can Do It (Photos)

I didn’t try ceviche for a very long time because it was before I learned to love sushi and I didn’t like the idea of eating raw fish. Until one day on a whim, I decided to try making some. You guys -- it’s not raw fish.

Through the magical powers of the acid in lime juice, the fish is “cooked” through. Ok, it’s not cook-cooked, but the texture is firm and not at all raw. So don’t be afraid of ceviche! Gather up some simple ingredients and make some with me.


Bonus: It’s incredibly healthy and in my humble opinion, a perfect diet food.


  • 1 pound cod or other white fish (or shrimp, that works too)
  • 8-10 limes
  • 1 jalapeño or Serrano chili
  • Handful of cilantro
  • 1/2 a red onion
  • 1 pint cherry tomatoes
  • 2-3 small Persian-style cucumbers
  • 1 avocado
  • Salt and pepper to taste

Ok, let’s get started!

First, freak out at how much fish costs. Decide to not shop at Whole Foods next time.

Then chop it up into little itty bits with a very sharp knife.

Gather your cubed fish and put it in a bowl or container of some sort, and wash your cutting board and knife with soap and hot water because hygiene. Then cut some limes in half.

And use your juicer thing you love to death to squeeze all the juice out onto the fish.

Be sure to have trouble doing it one-handed as you try to take a picture with your iPhone camera. We need this to be as awkward as possible.

Then add half a red onion, the cilantro, and chili, all finely chopped. Give it a mix with some salt and pepper, and it should look like this.

Now cover your dish or snap on your lid, and stick it in the refrigerator for several hours. I left mine overnight, because I did this at 11 last night, and I wasn't going to wake up at 3 a.m. to finish it. I love ceviche, but I also love sleep.

To finish the dish, grab the rest of your ingredients, and a cup of tea in your favorite mug. Or if it's after five -- a glass of wine (but I won't judge if it's not after five yet).

By the way, your fish will look like this after chillin' all night in the lime juice.

Chop the cucumbers ... on a new cutting board, of course, because the one you used to cut the onion, chili pepper, and cilantro is still in the sink from last night and you're lazy.

Have a hard time deciding between red and yellow tomatoes, and then quarters or slices. Decide to go with "all of the above" and use both colors, and slice some of each both ways. It's like free love in here, man.

Almost cut your thumb off when de-pitting the seed from the avocado.

Stir everything together, add more salt if needed, and serve in a festive cocktail glass just because you can.
