World's Most Amazing Peaches & Cream Shortcake Recipe

And the best part about Peaches and Cream Shortcake is that is really doesn't take a rocket scientist to make. In fact, I'd go as far as to say, despite it's loveliness, it's pretty dang easy.

Here's the perfect recipe for Peaches and Cream Shortcake. Hurry up and make it while the peaches are still perfect!


Peaches and Cream Shortcake


  • 2 cup biscuit mix, such as Bisquick
  • 1/3 cup sugar
  • 1/2 vanilla bean seeds
  • 1/3 cup heavy cream
  • 1/3 cup cold water
  • 4 medium peaches
  • 2 tablespoons sugar
  • 1/2 vanilla bean seeds
  • 1/2 cup heavy cream


1. Prepare the shortcake: Preheat oven to 350°F. Mix biscuit mix with sugar and seeds from half of a vanilla bean in a medium bowl. Stir in heavy cream and water. Transfer batter to lightly oiled 8-inch cake pan and bake until a skewer inserted in center of cake comes out clean, about 25 minutes. Set pan on a wire rack and cool for 15 minutes. Release cake from pan and cool completely.

2. Meanwhile, peel, pit, and slice 4 medium peaches. Toss with 2 tablespoons sugar and seeds from remaining half of vanilla bean in medium bowl; let sit 15 minutes, to allow peach juices to release. For whipped cream, beat heavy cream to soft peaks. Chill both peaches and cream.

3. Cut cake into wedges. Split each piece, spoon peaches onto bottom halves, cover with top halves, and drizzle with juice. Serve with a dollop of whipped cream.
