If you put a plate of Rice Krispies treats and a tray of cupcakes in front of most people, it would be a difficult choice indeed. The two classic desserts are both so temptingly delicious, it's hard to turn one down. So don't -- just combine them.
These chocolate Rice Krispies cupcakes are the best of both desserts. To a delicious chocolate, marshmallowy base, you can add anything you'd like -- from candy to frosting (I highly recommend frosting). Served up in individual cupcake wrappers, they're easy to serve and great for group gatherings.
Chocolate Rice Krispies Cupcakes
5 tablespoons unsalted butter
3 tablespoons light butter
1/3 cup unsweetened cocoa powder
2 bags (10 ounces each) mini-marshmallows
1/2 cup chocolate chips
10 cups Rice Krispies cereal
Candy, frosting, or other toppings of your choosing
Combine butters and cocoa in a large saucepan over medium-high heat, whisking until well combined and butter is melted.
Stir in marshmallows and chocolate chips and melt completely.
Remove pan from heat and stir in cereal, and any other topping you like.
Spoon into individual cupcake liners.
Cool completely before frosting if you choose to do so.
