The cupcake has been the shining star of the bakery scene for at least a decade now, which you have to admit is sort of a bummer for its cousin, the muffin. Just because it doesn't have frosting or some sort of decadent ooey-gooey filling doesn't mean it shouldn't be celebrated for its petite, fluffy goodness! Plus, you can totally get away with having a muffin in the morning, whereas indulging in a cupcake before noon just seems beyond gluttonous! And if you really want to push boundaries, there's no better way to do that than with a chocolate chip muffin, which is basically dessert disguised as breakfast. Eeeevvvil but oh so good!

1/2 cup (8 tablespoons) butter
1 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 cup (4 ounces) milk
2 cups (8 1/2 ounces) white whole wheat flour or all-purpose flour (spoon into cup then level off)
2 cups (12 ounces) semi-sweet chocolate chips
Coarse sparkling sugar, for topping
- Preheat oven to 350°F. Lightly grease a 12-cup muffin pan or line with paper liners.
- In a large mixing bowl beat the butter, sugar, baking powder, salt, vanilla, and cinnamon until fluffy. Beat in eggs, then stir in the milk. Mix in the flour just until combined, then the chocolate chips.
- Divide the batter evenly among the muffin cups. Sprinkle with a little coarse sugar. Bake the muffins for 30 minutes, or until a cake tester inserted into the center of one comes out without crumbs clinging to it (a little chocolate is OK!).
