PB&J ‘Sushi’ Recipe Puts a Fun New Spin on Kids’ Favorite Sandwich

how to make PB&J sushi rollsNow that summer vacation is upon us, my entire family seems to be running a mile a minute in 50 different directions. Meals need to be quick and easy to eat. So when a friend told me she'd made peanut butter and jelly sushi rolls, I was intrigued. They sounded like everything that makes for a good eat for kids. I begged her for the recipe ... and decided we'd give them a go.

She was right. They're easy peasy, lemon squeezy. Even better: they're about half as messy as the usual PB&J!

Oh, and don't worry ... there's no fish in this "sushi."

Instead there are all the standards of a good PB&J: peanut butter, jelly, and bread. The only difference is they're rolled up and cut into small bite-size pieces that a kid (or, heck, an adult) can pop in their mouth.

The big benefit, I noticed, is you don't have sticky jelly leaking out the sides when your kid squeezes that big sandwich too tight. And bite-size pieces are eaten so fast, there are no dropped sandwiches!

  • How to Make Peanut Butter and Jelly Sushi

    Gather your ingredients -- the beautiful thing is you don't need much! Your favorite bread, your favorite jelly, and creamy peanut butter. The only kitchen tools you'll need are a rolling pin and a butter knife.

    Roll out your bread until it's totally flat. If you want to check if it's flat enough, try rolling it up into a spiral (which you will do later). If it can roll easily, it's flat enough.

    Cut the crusts off. You want to leave as perfect a square of bread as you can get (don't worry, it doesn't have to be TOO perfect ... just make sure the crooked side is the one that ends up inside the sushi).

    Spread a thin layer of peanut butter across the entire square of bread. You want to cover the entire area, but make sure you don't lay it on too thick. You still have jelly to add!

    Spread a similarly thin layer of jelly across the peanut butter, stretching from one end of the bread to the other.

    Roll the entire thing up into a tight spiral of ooey, gooey peanut butter and jelly goodness.

    Slice your spiral into rolls .... and serve!
