How adorable are these little chocolate chip cannoli cups? They look like something you'd buy in a fancy little bakery, but they're actually quick and simple to make yourself.
The recipe is from Emily Bites, and the base is made up of mini frozen phyllo shells, so half of the work is already done for you. Then you make a creamy filling. Don't tell anyone, but they're also not as decadent as they look. Each one only contains 3 grams of fat and 63 calories, according to her calculations. I like to add a little whipped cream on top, which ups the counts a bit, but it's worth it.
Chocolate Chip Cannoli Cups
15 frozen mini phyllo shells
2 oz marscapone cheese
2/3 cup fat free ricotta cheese
3 T powdered sugar
1/4 t vanilla
A pinch of cinnamon (a little goes a long way!)
1/3 cup mini chocolate chips, divided
Whipped cream (optional)
Thaw shells for about 15 minutes at room temperature.
In a medium sized mixing bowl, combine the marscapone, ricotta, powdered sugar, vanilla, and cinnamon and stir together until thoroughly mixed.
Reserve a small pile of the chocolate chips for topping and stir the remainder into the cheese mixture.
Spoon the filling evenly between all the phyllo shells. Sprinkle reserved chocolate chips over the tops and serve.
