3-Ingredient Peanut Butter Cookies Are Super Easy & Delicious

peanut butter cookiesPeanut butter cookies are one of the simplest but most wonderful desserts of all time. They're a classic for a good reason -- because they're that good. Of course, it depends on the cookie, but when you get a good one, there are few things better.

This recipe from Her View From Home makes, hands down, the best ones I've ever had. They come out moist and chewy, and people flip for them. You only need three ingredients to make them (yes, three!), and one of them is not flour. That means they're perfect people who must stick to gluten-free diets. And while it's hard to improve on perfection, if you add some chocolate chips to the dough before baking, you'll do just that.

3 Ingredient Peanut Butter Cookies (Gluten Free)

1 cup of peanut butter (creamy or crunchy – your preference!)

1 cup plus 2 tablespoons white sugar

1 egg

Cream together the peanut butter and sugar. This is best done by hand.

Beat the egg, then add it to the peanut butter and sugar. When the dough is sticky, use a melon baller or small ice cream scoop to scoop out balls of dough.

Roll in additional sugar and place on a cookie sheet that has been lined with parchment paper. Bake at 350 degrees for about ten minutes.

Use a fork to lightly flatten each cookie until they crackle a bit at the edges.

Yield: About 20 cookies

Made these today and I must say OMG they were so yummy....

You can substitute brown sugar, and use even less then the 1 cup 2 tablespoons sugar. I have made them with 3/4 of a cup and they came out fine. Also adding a teaspoon of vanilla, or almond, or any other flavoring you like is AWESOME. I've added peanut butter chips and chocolate chips too. These are very versitile.

hi guys, just letting you know, we should credit this recipe to an Australian cook. She accidentally discovered this when she realised the cookies she just put into the oven were missing flour! then she shared this cookie again on tv cooking show, i tried that recipe immediately that afternoon, omgosh yummy yum yum! heeheehee... thanks Janelle Bloom.

They sound easy but we don't really care for peanut butter cookies.  I may save the recipe for a bake sale though.

I've made these before and they were just okay.

No flour in these.  How do they bake then?  I will bump this one over to a friend who is on a gluten free diet.
