As temperatures heat up, cooler desserts are what we all crave. That means ice cream, and lots of it. This easy ice cream cake is a great way to serve it up.
From Virtually Homemade, it's gorgeous and flavorful when topped with a delicious raspberry sauce. But there's a secret -- you start with regular old ice cream sandwiches you buy at the grocery store, so it couldn't be any easier. I know people often say that, but in this case, it's true. Layered with the raspberry sauce (or a sauce of your choosing) and a homemade creamy filling, they all come together to make one delicious and impressive dessert in a snap.
Easy Ice Cream Cake
Line an 8 1/2 by 4 1/2 inch loaf pan with a piece of wax or parchment paper, allowing the paper to hang over on both sides.
In a large bowl, whip the cream until stiff peaks form.
In the bottom of the pan, arrange 3 of the sandwiches in a single layer, cutting them to fit as necessary.
Spread half of the whipped cream and drizzle with coulis to taste. Repeat with the remaining sandwiches and whipped cream.
Cover with plastic wrap and freeze until firm, at least 2 hours. Holding both sides of the paper overhang, lift the cake out of the pan and transfer to a platter. Discard the paper and slice. Garnish with fresh berries and more coulis.
