Looking for a nutritious, delicious dinner that your whole family will love? Silly question -- of course you are. Aren't we all ... always? Well, have I got one for you. It's called Oh My Goodness Chicken, and it's amazing.
I originally saw it flying around on Pinterest and gave it a try one night. I was glad I did. It's moist, crunchy, and flavorful, and it couldn't be easier. My kids and husband loved it, and it's one that immediately was entered into our regular dinner rotation. While there are various adaptations of the recipe, the following is the combination I've found we like best.
Oh My Goodness Chicken
1 pound boneless skinless chicken breasts cuts into thin strips
1/2 cup plain Greek yogurt
1/4 cup parmesan cheese
1-2 cloves of garlic, minced
1/2 cup panko crumbs (regular bread crumbs work too, but the panko [Japanese bread crumbs] give it more crunch -- we like the whole wheat ones)
Preheat oven to 425.
Place chicken on baking sheet lined with parchment paper.
Mix yogurt, cheese, and garlic, and coat chicken with it.
Sprinkle with panko crumbs.
Bake for approximately 20 minutes or until chicken is cooked thoroughly.
