Sinful Crock Pot Brownies Recipe Will Rock Your World
If you haven't yet discovered the beauty of making desserts in your crock pot, it's time to get crockin'. These rich, delicious brownies are a perfect place to start.
The recipe is one I found at Clever Housewife, and it's as easy as it can be. You simply mix up the ingredients, pour them into your crock pot and forget them ... until it's time to eat them. They're the perfect easy dessert any night of the week, and also a great one to bring to work events or pot lucks. As the temperatures heat up, and I want to avoid turning on my oven more, I find myself turning to these a lot.
Crock Pot Brownies
1¼ cup flour
¼ cup unsweetened cocoa powder
¾ teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, chopped
8 oz unsweetened chocolate squares, chopped
1 cup sugar
3 large eggs, lightly beaten
1 cup walnuts coarsely chopped (optional -- pecans are good too!)
1 cup chocolate chips of any variety (peanut butter ones are delish!)
Spray slow cooker with cooking spray. Line the bottom with parchment paper to fit, and lightly spray the paper.
In a small bowl, mix together flour, cocoa, baking powder and salt.
In a microwave safe bowl, microwave the chopped butter and unsweetened chocolate in 30 second intervals. Stir after each interval, and continue until the chocolate is melted.
Add sugar to the melted chocolate and stir to combine.
Add eggs and flour mixture to your wet mixture. Stir in nuts and chocolate chips, just until moistened. Do not overmix.
Carefully pour batter into your slow cooker and smooth the top with a spatula.
Cover and cook on low for 3½ hours. Then uncover and cook for 30 more minutes. Remove the crock/dish from the heating source and run a knife around the edge to loosen brownies from sides. Let cool at least 2 hours. I actually did not wait to cool because we were antsy, and it was just fine.
Flip brownies out onto a cutting board. Carefully peel off the parchment paper and cut into squares.
