I can't tell you how much I love these tomatoes. They are without a doubt my favorite side dish of all time, and sometimes we even eat them as a great, light dinner. They're grilled tomatoes with mozzarella and basil, and they go perfectly with pretty much anything.
They're as easy as can be too. This is a recipe I've adapted from several ones I've found over the years. I think it's the perfect mix of garlic, tomatoes, and creaminess. Once you make them, they will become a must-make every time you fire up the grill.
Grilled Tomatoes With Fresh Basil and Mozzarella
4 medium-large, ripe tomatoes
4 tablespoons good-quality olive oil
4 large cloves garlic, crushed
1/2 cup chopped fresh basil
8 slices mozzarella cheese
Cut tomatoes in half, and season with salt and pepper.
Mix olive oil with crushed garlic and saute in pan until garlic is fragrant and starting to turn golden.
Heat grill, then brush cut-side of tomatoes with olive oil mixture.
Place tomatoes, cut-side down, on grill for 3-5 minutes.
Turn over and top with basil and cheese and continue to cook for another couple of minutes until cheese is melted.
Top with additional basil strips for garnish.
