Easter Peeps Cupcake Recipe Couldn't Be More Adorable

peeps cupcakesWhether you love the taste of Peeps or hate the taste of Peeps, there's no denying -- those little buggers are dang adorable. And let's be honest, Peeps pretty much symbolize Easter and Spring. So I say, regardless of your stance on the too-cute-for-words sugar-coated bunnies and chicks, why not throw them on some cupcakes today?

If you're in need of a quick, fun Easter recipe, it literally does not get easier than this, friends. And come on, who wouldn't love a Bunny Peeps Cupcake?

Easter Peeps Cupcake Recipe

Ingredients:

  • 1 package Bunny Peeps
  • 1/2 cup softened butter
  • 3/4 to 1 cup sugar
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1-1/2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 cup cold milk
  • Vanilla frosting (I used the canned kind for this -- Buttercream)

Instructions:

1. Preheat oven to 350.

2. Cream butter and sugar. Add eggs 1 at a time, beating after each addition. Stir in vanilla.

3. In a separate bowl, stir together all dry ingredients. Add to butter mixture; stir in milk.

4. Bake for 18-24 minutes.

5. Once cooled, frost and top with a Peep!

This is cool! I got a box of Peeps for Easter and don't care for pure extreme diabetes, so I didn't know what to do w/ them. Making cupcakes is a good idea. Thanks. :)
