Cocoa Puffs Cupcake Recipe Your Family Will Go Coo Coo For

cocoa puffs cupcakesWhen it comes to chocolate breakfast cereal, I've just never been able to cave to my children's cries for it in the morning. As delicious as it sounds, it's just too early for chocolate. I have, however, found a great way to use that yummy, crunchy goodness in a more acceptable way -- Cocoa Puffs cupcakes. Oh yes, you heard that right.

From Her View From Home, they are a mix of chocolate cupcakes, crushed Cocoa Puffs, and creamy icing, which is optional, but incredible. Bake a batch and watch your family go coo coo for them.


Cocoa Puffs Cupcakes

1 package chocolate cake mix
1 package instant chocolate pudding mix
1 cup sour cream
1/2 vegetable oil
1 teaspoon vanilla extract
4 egg whites
1/2 cup warm water
2 cups crushed Cocoa Puffs
Frosting (optional, but highly recommended)

Preheat oven to 350 degrees. Line muffin cups with paper liners.

In a large bowl, mix together the cake and pudding mix, sour cream, oil, vanilla extract, eggs, and water. Gently stir in the Cocoa Puffs and divide batter into lined cups.

Bake for 20 minutes, or until the tops are springy to the touch and a wooden toothpick inserted comes out clean. Cool completely before frosting.

You can use any old frosting recipe, but here’s one of my favorites. I would also dip your frosted cupcake in Cocoa Puffs when you’re done for a little extra flair -- much like this one!
