There's nothing that warms your body and soul better than a hot bowl of soup on a chilly evening, especially when you don't have to put a ton of effort into making it. And when it comes to cutting down on prep and cooking time, whipping up a delicious batch of soup in the slow cooker is the only way to go.
After stumbling across this Crock-Pot Creamy Tomato Soup recipe from Crockin' Girls, I know what's going to be on my dinner menu one night this weekend. With healthy ingredients that most of us probably already have in our pantries, this soup provides the ultimate dose of good old-fashioned comfort food with little to no effort. (Seriously. My 7-year-old could throw this dish together.)
Paired with a crusty loaf of French bread for dipping or a gooey grilled cheese sandwich, this meal is sure to please the whole family.
Creamy Tomato Soup
3 cups vegetable stock
1 (28-ounce) can whole peeled plum tomatoes
1 (14.5-ounce) can whole peeled plum tomatoes
1 (8-ounce) can tomato paste
3 cups half & half
2 - 3 cloves minced garlic
2 - 3 bay leaves
1 - 2 teaspoons thyme leaves
Salt and pepper to taste
Put all ingredients in the slow cooker and stir until mixed well. Cook on low for 6 - 8 hours.
Remove bay leaves once cooking time is completed, and then blend with a hand mixer, or transfer to blender.
Return to slow cooker and set temperature to warm, serve, and enjoy.
