The Ultimate Chicken Noodle Soup Recipe to Fight Colds & Flu

Want the most powerful, comforting, winter-warrior chicken soup we can possibly come up with? Comin' right up!

Let's throw in some immunity-boosting garlic, sweet potatoes, coconut milk, and lemon juice. Add in some soothing ginger and a little bit of chili paste to burn off congestion. Put it all together and we've got your ultimate, Thai-inspired flu-fighting chicken soup.


Ultimate Flu-Fighting Chicken Soup

  • 1 quart (4 cups) chicken stock (canned or homemade)
  • 1 can coconut milk
  • 1-2 tablespoons Asian chili paste like Sriracha or red curry paste
  • 3 garlic cloves, minced
  • 2-inch stub of fresh ginger root, peeled and finely grated
  • Salt and pepper to taste
  • 1 sweet potato, peeled and diced
  • 1 cup shredded chicken
  • 1/4 cup freshly squeezed lemon or lime juice
  • 2 green onions or scallions, thinly sliced crosswise

1. Heat chicken broth and coconut milk and dissolve chili or red curry paste into warm broth. Add minced garlic. Grate ginger directly into the soup so you capture all the juice. Season with salt and pepper. Add diced sweet potato. Cook on medium until sweet potato is just soft, about 20 minutes.

2. Add shredded chicken and continue cooking until chicken is warm. When ready to serve, add lemon or lime juice. Top each serving with sliced green onions.

Note: I've joked in the past about my chicken feet soup, but they're seriously good for you. They give your soup extra glucosamine chondroitin, collagen, and trace minerals. If you're making homemade chicken broth, consider brewing with feet. They can be hard to find -- I get mine from local Bo Bo chickens. Try an Asian market, or ask your grocer or butcher. But hey, I know they're kind of freaky, though, so feel free to skip if it sounds like too much for you.

If you're brave and can find some, add some fresh, red chilies sliced crosswise to your soup as well for extra kick and vitamins.
