The Ultimate Crock-Pot Mac & Cheese Recipe

macaroni cheeseSometimes you want good ol' fashioned, plain and easy macaroni and cheese out of the box. But sometimes, especially on a drizzly, freezing winter night, you want something with a little more "oomph!" Something a little more comfort foody. Something like ... Crock-Pot mac 'n' cheese! OMG, yes, please.

And while you might think of slow cooker recipes as taking all day long, this mouthwatering one cooks up in 3 hours or less. Not too shabby!

Crock-Pot Mac 'n' Cheese from HighHeelsandGrills.com

Ingredients:

  • 1-1/2 cups milk
  • 1 (12 oz.) can evaporated milk
  • 1/4 cup (1/2 stick) butter, melted and cooled to room temp.
  • 3 eggs
  • 1/2 tsp. salt
  • 3 cups shredded Italian blend cheese
  • 1/2 pound elbow macaroni 
  • Black pepper
  • 1/2 cup grated Parmesan cheese
 
Directions:
  1. Grease the inside of your slow cooker with cooking spray.
  2. Combine milk, evaporated milk, butter, eggs, and salt in slow cooker and whisk until smooth.
  3. Add the Italian cheese and macaroni and sprinkle with pepper to taste -- stir gently to coat evenly.
  4. Sprinkle the Parmesan cheese on top.
  5. Cover and cook on high for 30 minutes.
  6. After 30 minutes, reduce the temperature to low and cook for 1.5-2 hours, until center does not jiggle and pasta is tender.
  7. Place this cheesy goodness in a bowl and eat like you've never eaten before.

    Sounds good but NO WAY is that picture accurate. That would need to cook in the oven to brown like that. Anytime there is a crockpot recipe that has a pic of browned food I won't make it cause it is not a true pic.

    Very easy to make but this was not good. It was grainy and the cheese did not fully melt so it was not creamy. I might try it again using cheddar cheese instead. Jalaz77....the brown bits were probably from the pieces that were stuck to the side of the crockpot.

    I used an Italian blend from Walmart that had parm in it so I used 2 whole bags... it wasn't grainy and yes there were brown spots from the sides of the crock pot... it was pretty good but I missed the Cheddar taste, will try with different cheeses
