sausage egg and cheese casseroleFor as long as I can remember, I've eaten some form of an egg casserole on Christmas morning. For some reason my family called it "egg brunch," and some call it a strata, but no matter the name, it's the perfect breakfast or brunch dish for Christmas.

The following recipe from Taste of Home is one of my favorites as it's just the basics -- sausage, eggs, and cheese. However, you can also add a variety of chopped vegetables (peppers and mushrooms are particularly good) and/or change up the meats and cheeses (bacon and Swiss with a little chopped spinach thrown in is delish). The real beauty of it, however, is that you can make it the night before and just pop it in the oven in the morning.

Sausage Egg Casserole

10 eggs
2-1/4 cups milk
1-1/2 teaspoons ground mustard
1/2 teaspoon salt
1 pound bulk pork sausage, cooked and drained
2 cups cubed white bread
1-1/2 cups (6 ounces) shredded cheddar cheese

In a large bowl, whisk the eggs, milk, mustard and salt. Stir in the sausage, bread cubes and cheese.

Pour into a greased 13-in. x 9-in. baking dish. Cover and refrigerate overnight.

Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 30-40 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
