For the most part, when you think of Thanksgiving eats, you're probably thinking of the Big Meal. The sweet potato casserole, the green bean casserole, the mashed potatoes, and of course, the bird! But there's a whole lot to love about the before and after Turkey Day meals -- the breakfasts, brunches, lunches all peppered with Thanksgiving flavor -- as well. Not only do they offer bonus excuses for delish food or great ways to use leftovers, but who doesn't love spreading out the celebration?
Hence why pumpkin pie French toast has to be one of the most brilliant ideas EVER. It's got all the flavors of the seasonal fave, it's super-fast and easy to whip up, and oh yeah, it's French toast! Nom nom nom.
Pumpkin Pie French Toast from ClosetCooking.com
1/4 cup milk
1/4 cup pumpkin puree
1/4 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/8 teaspoon cloves
1/8 teaspoon nutmeg
2 tablespoons brown sugar
8 slices of bread
1. Mix the eggs, milk, pumpkin puree, vanilla, cinnamon, ginger, cloves, nutmeg, and brown sugar in low flat bowl for easy dipping.
2. Dip the bread into the egg mixture on both sides and grill in a pan until lightly golden brown, about 2-3 minute per side.
3. Serve with maple syrup.
