After stuffing myself to the gills on Thanksgiving, I swore I would never eat again. But now that I've digested, I've got only one thing on the brain: turkey leftovers! I posted a yummy turkey dip recipe a few days back. And, today I'm posting the recipe for my family's turkey casserole, which my mom always made for us when we were kids...but I also want to know:
What do YOU do with Thanksgiving leftovers (besides make turkey sandwiches, of course)?
1 pint sour cream
1 can cream of chicken soup
1 pkg. Pepperidge Farm stuffing mix
Shred turkey. Put it into casserole dish (pre-sprayed with cooking spray). Mix sour cream and soup together and spread on top of chicken. Make the stuffing according to directions and crumble it on top of cream/soup mixture. Bake at 350 degrees for 15 min. covered and 10 min. uncovered or until bubbly around the edges. This can be prepared ahead of time and refrigerated until cooking.
