There's one surefire way to start your day off with a smile -- donuts. It's pretty much impossible to have a grumpy morning when you start out with their sweet, sugary goodness, and these mini chocolate chip donut pancake dippers are particularly smile-inducing.
From Lauren's Latest, they're part pancake, part donut, and all parts delicious. They're even baked, not fried, so they're light on guilt too. These little treats are perfect for those slow Sunday morning breakfasts, and they look lovely on a brunch buffet. Just serve along with some syrup for dipping, and let the happiness ensue.
Mini Chocolate Chip Doughnut Pancake Dippers
1 cup milk
2 tablespoons oil or melted butter
1 teaspoon vinegar
1/2 teaspoon vanilla
1 1/4 cups self rising flour
1/2 teaspoon baking soda
1 tablespoons sugar
1/4 cup mini chocolate chips
Preheat oven to 325 degrees. Spray mini doughnut pans (or mini muffin tins) with nonstick cooking spray and set aside.
In a large bowl, whisk milk, egg, oil, vinegar, and vanilla together. Pour in remaining ingredients and whisk until mostly smooth.
Spoon into prepared pans until half full. Bake 4-6 minutes or until just cooked through and barely brown.
Cool 5 minutes then turn upside down to remove. Serve warm with maple syrup.
