Here's the thing: Cupcakes make me happy. Here's the other thing: Cupcakes make everybody happy! And that, my friends, is an indisputable fact. So if, for some reason, you've been trying to convince yourself that you're really not a "cupcake person" or that cupcakes are "just for kids" or are only acceptable as the "occasional birthday treat," you may as well give up. It's not like somebody's gonna come along and give you a prize for cupcake willpower or something.
So now that you're out of the cupcake closet, the only question remaining is this: What kind of cupcake are you in the mood to bake today? I can't answer that question for you, but I can make a suggestion: These Vanilla Buttermilk Cupcakes from DashRecipes.com are suitable for just about any occasion. Dress them up (pink frosting with red sprinkles is quite fetching), dress them down, bring them to a party, eat them in bed -- again, I can't make these decisions for you.
But I can tell you how to make these cupcakes:
Vanilla Buttermilk Cupcakes
1 1/2 cups flour
1 1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 1/2 sticks unsalted butter, softened
1 cup sugar
2 large eggs
1 egg yolk
1 1/2 tsp vanilla extract
1/2 cup buttermilk

1. Preheat the oven to 350ºF. Fit a 12-cup muffin tin with cupcake liners. Whisk together the flour, baking powder, baking soda, and salt.
2. Beat butter and sugar until fluffy. One by one, mix in eggs, the egg yolk, and vanilla. Add the flour mixture alternately with the buttermilk, mixing until smooth. Spoon out the batter.
3. Bake for about 25 minutes. Cool. Top with your favorite frosting.
