Personal Flat Bread Pizzas and Fresh Fruit Skewers

Serves 4

Prep time: 20 minutes

Cook time: 30 minutes


  • 1 cup diced tomatoes
  • 1 cup tomato puree
  • 1 ounce tomato paste
  • 1 tablespoon minced garlic
  • 1/4 teaspoon sugar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon onion powder
  • 1 tablespoons grated Parmesan cheese
  • 4 (pre-baked) rounds flat bread


  • 1 pound fresh mozzarella (in water)
  • 1 pound shredded mozzarella
  • 1 cup Parmesan cheese
  • 1 cup Feta cheese
  • 1 cup cooked bacon
  • 1 cup cooked Italian sausage
  • 1 cup pepperoni
  • 1 cup sliced mushrooms
  • 1 cup thinly sliced green or red bell peppers
  • 1 cup caramelized red onion
  • 1 cup sliced black olives


  1. Preheat oven to 350 degrees F.
  2. In a medium saucepan stir together diced tomato, tomato puree, tomato paste, garlic, sugar, oregano, basil, marjoram, onion powder, and cheese. Bring to boiling and reduce to a simmer.
  3. Cook, stirring occasionally, until sauce thickens, about 20 minutes.
  4. Remove pan from heat; puree with a hand-held stick blender. Add salt and pepper to taste; set aside.
  5. Place flat bread rounds on sheet pan. Spoon 1/2 cup, or desired amount, of sauce on flat bread. Sprinkle choice of cheese over sauce; top with choice of vegetables, meats, and herbs.
  6. Place sheet pan in oven. Bake 7 to 10 minutes or until cheese is melted and bubbly. Remove pan from oven; let stand 5 minutes before serving.


Fresh fruit skewers:

  • 1/2 seedless watermelon, cubed
  • 1/2 fresh pineapple, cubed
  • 1/2 cantaloupe, cubed
  • 1/2 honeydew melon, cubed
  • 1 pint fresh strawberries, rinsed, hulled, and cut in half
  • 1 cup green seedless grapes
  • 1 cup red seedless grapes
  • 1 tablespoon chili-lime seasoning


  1. Slide fruit cubes onto wooden skewers, alternating varieties and colors.
  2. Sprinkle fruit with chili-lime seasoning. Serve chilled or at room temperature.

Serve family style.

  • Reduce: to simmer liquid, causing water to evaporate, flavors to intensify, and texture to thicken as volume is lost.
  • Dice: a classic knife cut, typically 1/2-inch cubed.
