Candied Walnut Salad
Thanksgiving's just two days away...I don't know about you, but I'm certainly feeling the pressure. I've got a simple recipe for candied walnuts that will dress up any dinner. Just sprinkle them over greens with a bit of apple for a easy, fall-inspired salad, or serve them as a sweet snack before dinner with cheese and fruit.
Caramelized Walnuts from Epicurious.com
Nonstick spray
1/2 cup sugar (I use brown)
2 tablespoons balsamic vinegar
1.5 cups walnuts

Candied Walnuts
Preheat oven to 325. Combine sugar and vinegar in small saucepan. Stir over medium heat until sugar dissolves (about 3 minutes). Add nuts. Toss to coat. Transfer mixture to baking sheet, lined with foil and sprayed with nonstick spray. Bake until nuts are deep brown and syrup has thickened, stirring occasionally (about 10-15 minutes). Be careful not to burn. Cool completely. Break apart. Can be made 2 days ahead.
