I don't know why, but I feel like lately everyone is crazy about biscuits. Maybe it's because they go so well with barbecue and picnics. Maybe it's because they're so dang easy to make. But I think it's about time for some biscuits. Especially cheesy biscuits!
There are some tricks to making the cheese biscuits of your dreams. First, use real butter and keep it cold. Try to use fresh baking powder, no older than six months, for a good rise. And be careful not to over-mix. The following recipe my adaptation from this parmesan cheese biscuits recipe.
Cheddar Cheese Biscuits
Ingredients:
- 2 cups plus 2 tablespoons all-purpose flour, more for rolling out dough
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 2 teaspoons baking powder
- 7 tablespoons butter, cold
- 1 /2 cups sharp cheddar cheese, grated
- 3/4 cup buttermilk
Directions:
1. Combine flour, salt, pepper, and baking powder in a bowl and keep in refrigerator. Cut up butter into small chunks.
2. Preheat oven to 400 degrees. Combine butter chunks into flour mixture, then add cheese, and finally add buttermilk. Mix (with your hands if you like) until just combined.
3. Knead dough just a couple of times. Roll or pat out about 1/2 thick onto floured surface. Use a round cookie cutter dipped in flour to cut out rounds. OR, just use a flour-covered knife to cut out squares. If you're doing rounds, you can roll out and re-cut your leftover dough once, but after that the dough starts to get tough.
4. Bake for about 20 minutes, rotating sheet halfway through baking. Biscuits are done when they are golden on top.

I love biscuits, never thought to add cheese!
I want to be able to make good biscuits sooo bad, but it's not as simple as a good recipe, you have to have some kind of instinct that I apparently am lacking. These sound wonderful, and I will try again, but I don't have high expectations, lol.
