If you like Rolo candies, you must make these little cheesecakes. They are a mixture of chocolate, caramel, and creamy cheesecake, and they will blow you away.
The fact that they sell unwrapped Rolos now makes them easier than you'd imagine too, though having your kids unwrap them will keep them busy for a little while. The Rolos melt down into the crust of these little cakes, and form a carmely crust that puts them over the top. The recipe is from Shugary Sweets, and she suggests that you can also just make them in a pan and cut them into slices for more of a bar-like dessert. Either way they are delish!
Chocolate Chip Rolo Cheesecake Muffins
For the Cake:
- 3/4 cup Crisco butter flavored shortening
- 3/4 cup sugar
- 1/3 cup brown sugar
- 1 egg
- 2 tsp vanilla extract
- 1 1/2 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 cup mini chocolate chips
For the Filling:
- 24 Rolo candies (I used minis, but regular would work too)
- 2 pkg (8oz each) cream cheese, softened
- 3/4 cup sugar
- 1 tsp vanilla extract
