I used to think the only way you could improve on a batch of brownies was to add more chocolate. Ladies and gentleman, I sit here today to confess I was wrong. Behold the miracle that is marshmallow brownies!
Mmm. Hmm. Ooey. Gooey. Marshmallow. It sticks to your fingers and melts on your tongue, and it is a perfect match for the chocolate-y fudge that makes a brownie so sinful. And I've got a little extra bit of yum for you in this recipe for Marshmallow Brownies -- the surprise bit of sweet in here? Butterscotch chips!
Now, to the kitchen! Oh, but don't forget to take this recipe with you:
Marshmallow Brownies (adapted from All Recipes)
Ingredients:
- 1 cup butterscotch chips
- 1/2 cup butter
- 1 1/2 cups flour
- 2/3 cup packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups miniature marshmallows
- 2 cups milk chocolate chips
Directions:
- Melt butterscotch morsels and margarine in a large bowl in microwave. Stir the mixture well and let it cool to lukewarm.
- While the liquid mixture is cooling, mix flour, brown sugar, baking powder, salt, vanilla, and eggs into the butterscotch mixture; mix well. Fold in marshmallows and chocolate morsels.
- Spread batter into a lightly greased 9x13 inch pan.
- Bake 25 minutes at 350 degree or until knife comes out clean.

I am not a big fan of brownies, but like to add a little something to them when I make them. Marshamallows are a favorite here.
