Wonderful Watermelon Pancakes to Perk Up Summer Mornings

watermelon pancakesAs school days become distant memories, and mornings can luxuriously roll out a little longer in the summer, it's a great time to have a little fun with breakfast. These watermelon pancakes are the perfect start to a lovely summer day.

From The Idea Room, they're some of the most adorable pancakes I've seen, and I bet even the pickiest eaters would perk up at the sight of them. Even though they'll make a big impact on your breakfast table, they're really not all that complicated to make either with her step-by-step instructions. So don't let their adorableness intimidate you!

Watermelon Pancakes

2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/2 cup milk
1/4 cup unsalted butter, melted

Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.

Lightly beat the eggs with the buttermilk, milk and melted butter.

Just before you are ready to make the pancakes, add the liquid ingredients to the dry ingredients all at once, stirring just long enough to blend. The batter should be slightly lumpy.

If you want to add fruit or nuts, stir them in now, or you may sprinkle them on the pancakes while they are on the griddle.

Heat a lightly greased griddle or heavy skillet over medium-high heat (375 degrees on an electric griddle).

Separate the pancake batter into three different bowls.  Pour half of the batter into one bowl and then split the other half between the two other bowls.  

Add red food coloring to the bowl with half of the batter.  Then in the other bowls add green food coloring to one and leave the other bowl white. 

Pour a thin line of green in a half circle.  I used a spoon and just dribble the batter into a line. I followed suit and added a thin line of white right next to the green. 

Fill in the rest with the red batter.  It doesn't have to be perfect.  I trimmed them with my kitchen shears later. 

Then I sprinkled some mini chocolate chips into the red batter.  Then when the pancake is ready, flip it over and cook the other side.

    Wouldn't it be easier just to make a whole pancake then cut it down the middle?

    I agree with the comment about the food dye.  It's so bad for kids.   Feed them a REAL WATERMELLON!

    These are just darling. I'll be trying these the next time the grand-chicklets spend the night.

    Lighten up people. Nothing will kill you in moderation. "Real" watermelon for breakfast wouldn't be good either. It's full of sugar and it's not well balanced. A diabetic wouldn't be able to eat fruit for breakfast. Different strokes people.

    I agree with JAFE! What's the big deal? Let them have some cute pancakes like that once and a while - They are only little once! My son sould love these - He also loves and eats plrenty of REAL fruits and veggies. I would imagine that there are natural food dyes you could use to create this as well...

    ah yes what is the big deal - duh

    sorry but yes maybe diabetics can't eat watermelon for bf bust most people can, i seriously don'tknow where this "fruit is bad for you in excess" crap came from - my kid can have as much fruit as she can eat - she is normal weight, above average intelligence and doesn't know what candy or food dye is at age 2.

    Well you are very lucky toniperoni. My husband has been a diabetic for most of his life and fruit to him is like a candy bar. Sugar is sugar.
