As school days become distant memories, and mornings can luxuriously roll out a little longer in the summer, it's a great time to have a little fun with breakfast. These watermelon pancakes are the perfect start to a lovely summer day.
From The Idea Room, they're some of the most adorable pancakes I've seen, and I bet even the pickiest eaters would perk up at the sight of them. Even though they'll make a big impact on your breakfast table, they're really not all that complicated to make either with her step-by-step instructions. So don't let their adorableness intimidate you!
Watermelon Pancakes
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/2 cup milk
1/4 cup unsalted butter, melted
Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.
Lightly beat the eggs with the buttermilk, milk and melted butter.
Just before you are ready to make the pancakes, add the liquid ingredients to the dry ingredients all at once, stirring just long enough to blend. The batter should be slightly lumpy.
If you want to add fruit or nuts, stir them in now, or you may sprinkle them on the pancakes while they are on the griddle.
Heat a lightly greased griddle or heavy skillet over medium-high heat (375 degrees on an electric griddle).
Separate the pancake batter into three different bowls. Pour half of the batter into one bowl and then split the other half between the two other bowls.
Add red food coloring to the bowl with half of the batter. Then in the other bowls add green food coloring to one and leave the other bowl white.
Pour a thin line of green in a half circle. I used a spoon and just dribble the batter into a line. I followed suit and added a thin line of white right next to the green.
Fill in the rest with the red batter. It doesn't have to be perfect. I trimmed them with my kitchen shears later.
Then I sprinkled some mini chocolate chips into the red batter. Then when the pancake is ready, flip it over and cook the other side.

I'm a type 1 diabetic, and I eat fruit for breakfast, all the time, and, any other time I want. That's what I take insulin for. As a type 1 diabetic, I simply do not make insulin myself, and I can, and do, eat anything that anyone else can eat, and adjust my insulin injections accordingly. Now, would I recomend a high sugar high carb diet to anyone? Diabetic or not? No, but that's just my own opinion. Now, maybe a type 2 diabetic may be different as that is insulin resistance, and that is harder to treat in some ways, as even though a type 2 diabetic can take insulin to "cover" the sugar and carbs in these pancakes, their body will have a hard time using the insulin itself, so it is really important that they try to limit their carb and sugar intake much more so than a type 1 like myself. Forgive me please if I am misinformed!
And as other posters have said, everything in moderation :)
The different types must have different types of diets Taisie. If you take insulin, maybe you can afford to eat sugar and your insulin adjusts to it. My husband has to try and control his type 2 with his diet and he's only allowed X amount of sugar in it so if he overeats sugar, his sugar levels go way up. The sugar in fruit doesn't affect people without it. That's interesting.
I should have added that if he can't maintain his sugar levels with his diet he'll have to be put on insulin but he's been fighting that for over 30 years. I give him a lot of credit.
If you don't like using food coloring, use a natural food dye. Don't judge other parents for doing what works best for their kids. Also, I don't see anything in the article that says these pancakes should be eaten instead of real watermelon, so people, get over yourselves.
These are adorable. But I think I'd go with RhondaVeggie's suggestion and make a whole round watermelon pancake and then cut it in half. It' be great to serve real watermelon with it and make a watermelon-themed breakfast! :D
