Growing up, there was a place in the North Chicago suburbs my mom always wanted to go to that was famed for its amazing apple pancake. We're not talkin' a regular ol' flapjack. This was a serious pancake, replete with perfectly tender, cinnamon and sugar-coated apples slices and topped with rich roasted walnuts. Definitely not an every morning kind of breakfast, but one of those once in a blue moon treats you'll never forget.
Still, why shouldn't we be able to make something like that heavenly pancake at home? From the sweet cooking blog I Adore Food, here's a recipe for buttery cinnamon apple pancakes. (Is your mouth watering yet?!)

- 4 medium apples, (granny smith or lobo)
- 5 tablespoon butter
- 5 tablespoon brown sugar
- 1 teaspoon cinnamon
- 3 1/2 teaspoon baking powder
- 1 1/2 cup all purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 egg
- 3 tablespoon butter, melted
- 1 1/4 cup milk
- Peel apples and slice them in 1/8 of an inch thick slices. (Use harder apples like lobo or granny smith.)
- In a saucepan, melt butter and brown sugar. Add the apples and the cinnamon and cook on medium low heat until the apple have soften, without letting them get mushy. Put aside.
- In a large bowl, sift together the flour, baking powder, salt, and sugar. Make a well in the center and pour in the milk, egg, and melted butter; mix until smooth.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
- You can roast some chopped walnuts and sprinkle pancakes with them, as well as some good maple syrup.
