avocadoOh, lovely, lovely avocados. How do I love thee? Let me count the ways. I love thee in sandwiches. I love thee in salads. I love thee in guacamole. In truth, there are few ways I don't love an avocado. I have avocado conditioner for my hair. I've used avocado masks for my face. I'm just an avocado junkie. Yeah, I they are fattening, but it's the "good" fat. The good-for-your-heart unsaturated kind of fat. And avocados are in season. Join me, if you will, for this trip down awesome-things-to-do-with-an-avocado lane.

Guacamole. Originated in Mexico (duh!), guacamole is pure genius! This recipe from Simply Recipes uses peppers and even suggests some cottage cheese, which seems kind of weird to me, but could be interesting. Pair with tortilla chips -- and a margarita!

Avocado salad. Avocado salad sounds good but avocado and shrimp salad sounds even better.

Avocado soup. There are dozens of ways to make avocado soup, but this one from The Food Network with a crab relish sounds delish.

Avocado smoothie. I've never tried an avocado smoothie before, but this one from Bon Appetit sounds like a healthy milkshake.

Avocado mashed potatoes. I love to throw interesting things into mashed potatoes (olives are a fave) so mashed potatoes with avocado sounds perfect. This recipe is low fat and low cal. Personally, I'd toss in some sauteed garlic.

Avocado stuffed red peppers. Avocados make a great stuffer and this recipe is easy and healthy.

If I have a random half an avocado, I use it as sandwich spread instead of mayo. Yum.

My daughter loves pudding...she asks for it at every meal. My sister found a recipe for avocado chocolate pudding which is a great alternative to packaged pudding, and is a fruit/veggie serving :) I still don't give it to her for every meal, but honestly, sometimes it's part of her dinner!

For a big batch: 6 avocadoes, 1 cup honey, 1 cup cocoa and a bit of water. Blend (I use a magic bullet, but I'm sure anything would work!). It's super easy to make small batches, just adjust the amounts of honey and cocoa for how many avocadoes you use.

Sure, leftover chicken diced up with red or green onion, a bit of celery, a little diced red or yellow bell pepper, a dash of Crystal hotsauce ( my fave)a dab of mayo ( I like olive oil mayo) some black pepper and spoon it into a halved pitted acocado. Low in bad fats. Good source of protine, healthy carbs and just yummy! Makes a great lunch !

Avacado doesn't have a "season". This is a marketing ploy to drive up costs. Avacados will stay on the tree, completely mature and will not ripen (until picked) for up to 7 months where they can be harvested and shipped at any time.
