National Grilled Cheese Day came and went last month, but who needs a holiday to indulge in the all-time fave sandwich? In some households, every day is National Grilled Cheese Day. What can you do? It's just so easy and the little ones can't get enough!
But sometimes, you want ... okay, you need to mix it up. Have no fear, because here are seven easy, speedy variations on the classic grilled cheese sandwich that you're bound to salivate over.

For Tyler Florence's famed recipe, all you need is dijon mustard, 8 slices country-style white bread, sliced 1/2-inch thick, 12 ounces cheddar cheese, 12 slices bacon, cooked to desired doneness, 1 green apple, and thinly sliced 3 tablespoons unsalted butter.
Directions: Heat grill pan or large skillet over medium-low heat. Assemble sandwich: Generously spread Dijon on 4 slices of bread. Top with slices of cheddar, 3 pieces of bacon, and apple slices. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip and continue to cook until cheese is thoroughly melted and sandwich is golden brown.
