7 Easy Grilled Cheese Sandwiches That Are Deliciously Different (PHOTOS)

grilled cheese sandwichNational Grilled Cheese Day came and went last month, but who needs a holiday to indulge in the all-time fave sandwich? In some households, every day is National Grilled Cheese Day. What can you do? It's just so easy and the little ones can't get enough!

But sometimes, you want ... okay, you need to mix it up. Have no fear, because here are seven easy, speedy variations on the classic grilled cheese sandwich that you're bound to salivate over.

  • Grilled Cheese With Bacon & Apple Slices

    For Tyler Florence's famed recipe, all you need is dijon mustard, 8 slices country-style white bread, sliced 1/2-inch thick, 12 ounces cheddar cheese, 12 slices bacon, cooked to desired doneness, 1 green apple, and thinly sliced 3 tablespoons unsalted butter. 


    Directions: Heat grill pan or large skillet over medium-low heat. Assemble sandwich: Generously spread Dijon on 4 slices of bread. Top with slices of cheddar, 3 pieces of bacon, and apple slices. Place the remaining bread on top and spread with butter. Place on skillet buttered-side down and butter the remaining side. Cook until cheese is slightly melted and bread is browned. Flip and continue to cook until cheese is thoroughly melted and sandwich is golden brown.

    All you need are five ingredients to pull together a "grown-up" grilled cheese: pancetta, brioche, sharp white Cheddar, heirloom tomato, Kosher salt and freshly cracked black pepper, and 3 tablespoons butter at room temperature. Assemble, grill, and devour!

    How 'bout grilled cheese cooked French toast style? Yes, please! Assemble sandwiches with cheese, sliced deli meat (ham or turkey), and mustard or mayo. Beat 2 eggs with 1/2 cup milk. Dip sandwiches in egg mixture and fry in hot skillet until golden.

  • Healthier 'Revamped' Grilled Cheese

  • Buffalo Chicken 'Grilled Cheese' Quesadilla

    It may not be grilled cheese in the traditional sense, but if you're looking for something ooey gooey, cheesy, and with a kick, you've come to the right recipe. This buffalo chicken quesadilla was a touchdown at my Super Bowl party this year for a reason. All you need: 2 cups finely diced cooked chicken, 1/3 cup hot sauce, 2 tablespoons melted butter, 2 cups shredded Monterey jack cheese, 8 (8-inch) flour tortillas. Just mix butter and hot sauce, coat chicken in the sauce, layer chicken and cheese on tortillas, throw 'em on the stove top to grill 'em up, and enjoy!

  • Italian Grilled Cheese

    It takes just three ingredients to pull together an Italian-style sandwich that's like pizza and grilled cheese rolled into one. Layer basil & oregano pesto (homemade or store-bought), mozzarella cheese, sliced tomato on Italian bread. Cook on panini press or the stove top. Mangia!
