Summer is around the bend and that means one thing. Summer vegetables! I grew up in the country and summer was a time for fresh veggies from farmer's markets and even from my own backyard. There are vegetables and then there are seasonal vegetables that are best tasted in summer.
So here's 4 soup recipes that take advantage of all summer has to offer and should bring you flashbacking to a childhood of outdoorsy adventure.
Fresh corn and tomato soup. This soup has the best of those two summer staples: corn on the cob and ripe tomatoes.
Cucumber soup. Cucumbers are, of course, best in summer. And you can make this one either hot or cold.
Zucchini Basil soup. Epicurious has this delicious way to use zucchini in a soup without having to use cream.
Avacado soup with a Mexican twist. Avacados hit their peak in summer. Pregnant moms who want to get enough folate will get it here.
All of these summer vegetables remind me of my childhood. To really go on a nostalgia kick, I'd serve one of these up and then hit the blueberry farm for a session of picking!
