5 Crazy Good Ways to Make Corn on the Cob

by Julie Ryan Evans on May 7, 2012 at 1:22 PM

corn on the cobI've seen the piles of corn on the cob starting to creep into the markets, and I've already pulled out my holders on more than one occasion. And so begins the season of one of the most delicious vegetables that screams summer like none other.

It's fun, bright, and festive, and goes with most any meal. Because it's so delicious and simple, it lends itself to many different recipes too. Here are five of my favorite ways to prepare corn on the cob.

What are your favorite ways to cook corn on the cob?

Fire Roasted Corn

Cooked over an open flame, fire-roasted corn has one of the best and most distinctive tastes. Once you get the technique down, you won't want to do it any other way.

You still cannot beat just plain old boiled corn on the cob in salty water and then buttered with a bit more salt and pepper!  Yum!  Our favorite way to eat corn on the cob.

My simple way if it's still in the husk, roast it on the grill.

My complicated, more favorite way..take it out of the husk, boil in a pot of water with salt, a little bit of sugar, cilantro and red onion. Once almost fully cooked, drain the water and  place them on a piece of foil cover with butter, salt, pepper, and a little garlic herb rub/mix/sprinkle and wrap the foil around it and throw that sucker on the grill or in the oven for about 10-15 minutes so it gets a nice flavor.

Then my favorite way to eat it is sprinkled with a little bit of cayene pepper and freshly grated parmesan cheese.

Buy nice fresh corn in the husk.  Don't do ANYTHING to it.  Preheat your oven to 350.  Put the corn in for 30 to 40 minutes, depending on how crunchy you like it.  Pull back the husks and use them for a handle.  Pick off the silks...they come off more easily after cooking.  Butter and season.  That is all.

Corn is not a vegetable, it's a grain.
